Description
César Fernández Díaz is a young winemaker working near the Ribera del Duero with a fresh, low-intervention approach. Carremolino is a field blend built on Tempranillo with the white grape Albillo and other old-vine red and white varieties from Castilla y León, farmed biodynamically and made as a natural wine with minimal additions. The continental plateau brings hot days and cold nights, a wide diurnal range that ripens the fruit slowly while locking in acidity and aromatic detail. Co-fermenting the Tempranillo with a portion of white Albillo lifts the aromatics and lightens the texture, and twelve months in barrel rounds the wine without imposing heavy oak. At 12.7 percent it is restrained and fresh. The colour is a deep but bright cherry red, with a refined nose of raspberry, cherry and red berries, a floral white-flower note and a savoury, earthy undertone. The palate is light to medium bodied, with fine tannin, lively acidity and a clean, mineral finish that reflects the producer's focus on freshness and terroir. Serve at 14 to 16 degrees, in a standard red glass. It suits lighter meats and mushroom dishes.
