Cénit GDLL is an old-vine Godello from Viñas del Cénit, in the Tierra del Vino de Zamora. Barrel-aged for eight months, it balances stone fruit and body with a fresh mineral core, showing white peach, pear and toasted almond.

Description
Viñas del Cénit works in the Tierra del Vino de Zamora, in Castilla y León, and this white is made from old-vine Godello. The vineyards sit on sandy soils over a limestone and clay subsoil, which drains freely and reflects heat while the deep-rooted old vines draw on reserves that keep the fruit concentrated and balanced. This is a continental setting with hot days and cold nights, and the wide temperature swing preserves acidity and aroma in a variety that can otherwise turn heavy. The wine ages eight months in oak barrels. The barrel allows a slow, measured exchange of oxygen that softens the wine and adds a light toast and vanilla, while lees contact during ageing builds a creamy weight around Godello's naturally full body. The colour is straw-yellow with golden highlights, the nose shows white peach, pear, white flowers and a touch of almond, and the palate is broad and textured with citrus peel and a mineral, saline finish. Serve at 11 to 12 degrees in a white wine glass.

The body and light oak carry roast chicken, grilled salmon and pork loin. It also works with baked squash and mushroom dishes, where the stone fruit and toast meet their earthiness.
