Eduard Sanromà makes L’Incorrecte at Celler Sanromà in Vila-Rodona, Catalonia, from native Parellada. Two months on the lees in stainless steel follow skin contact, giving an intense golden wine with citrus peel, apricot and a herbal lift.
Description
Celler Sanromà is the work of oenologist Eduard Sanromà in Vila-Rodona, in Catalonia. L'Incorrecte is made from Parellada, a native Catalan white better known as a Cava grape, here farmed organically and made naturally. The wine begins with skin contact, the must macerating on the grape skins so that the skins lend colour and a gentle tannic grip, before two months on the lees in stainless steel vats. The steel ageing keeps the wine fresh and aromatic rather than oxidative, and the lees contact adds a fine savoury texture as the spent yeasts release mannoproteins into the wine. Parellada is a high-acid, late-ripening grape, and its natural freshness keeps the wine lively despite the maceration. The colour is an intense yellow with golden highlights. The nose shows citrus peel, apricot and white peach over chamomile and dried herbs, while the palate is dry and textured, with light skin grip, a saline thread and a clean herbal finish. Serve at 10 to 12 degrees in a white wine glass. It suits white fish, shellfish and fresh salads.
