Celler del Roure makes this organic Valencia rosé from the rare indigenous Mandó grape, aged six months in clay amphorae. It is pale pink and savoury, showing red berries, plum, dried herbs and a chalky, mineral freshness.
Description
Celler del Roure is a family winery founded in 1996 by Pablo Calatayud in Moixent, in the interior of Valencia. This rosé is the debut of a project built around Mandó, a lesser-known indigenous variety the winery is helping to revive, farmed organically. The wine spends six months in buried clay amphorae rather than steel or oak. Clay is porous and neutral, allowing a slow, gentle oxygen exchange that builds texture and a savoury depth without adding wood flavour, while the cool, even temperature of the buried jars keeps fermentation steady. The result is a rosé with more grip and structure than the pale Provence model. The colour is a brilliant pale pink. The nose leads with red berries and plum, with floral lift and a herbal, earthy undertone. The palate is dry and textured, the fruit carried by a fine, chalky minerality and a saline finish that reflects the amphora ageing. This is a rosé built for the table rather than the poolside. Serve at 10 to 12 degrees. It suits white fish, shellfish and grilled vegetables.
