Description
Celler Credo farm organically and biodynamically in Penedès, avoiding synthetic fertilisers, pesticides and herbicides in favour of wines that speak of their terroir. Mirabelles is made from Malvasía de Sitges, an old Mediterranean coastal variety once nearly lost to the region, prized for its natural perfume. The warm Penedès climate is tempered by sea breezes off the Mediterranean, which help the grape hold its aromatic freshness. The wine is fermented and aged in wood, where lees contact and slow oxygen exchange through the barrel build texture and a gentle nuttiness while rounding the aromatics. It is then held for a further 24 months in bottle, softening the wine and letting the aromas knit together before release. The 2019 is deep gold and openly aromatic, with white flowers, white peach and apricot lifted by citrus peel and a note of beeswax. The palate is dry, textured and long, with an almond and stone-fruit character and a saline finish. Alcohol is modest at 11.5 percent. Serve at 10 to 12 degrees in a white glass.

Additional information
The perfume and texture suit roast white fish, grilled prawns and lobster with butter. It also works with roast chicken and mild cream-based sauces, and stands up to soft, washed-rind cheeses.
