Description
Most Trinidad rum is light column distillate, so a pot still bottling like this is the exception. Drawn from the Angostura group's Trinidad Distillers, it was selected by Compagnie des Indes, the respected French bottler known for terroir driven, natural single casks, and released for the retailer Perola at cask strength.
Eleven years in ex-bourbon oak give it noticeable wood for the age, with ginger, cinnamon and candied fruit on the nose and a dense, spicy, faintly dirty palate carrying demerara sugar sweetness. The finish turns toward dark chocolate, with medicinal and tannic notes and a bitter edge that marks it as a robust, wood forward pour rather than a soft one. Bottled without colouring at 59.7%, it rewards a little time in the glass.
