The profile is dry and restrained rather than loud. Esters and green apple lift the nose alongside citrus and an overripe note, while the palate runs to pear, oak and a herbal dryness with a whisper of honey and ginger. The finish is woody and gently spicy with yellow fruit. There is no big ester funk and no cask strength punch here, which is the point, it reads almost like a fruit brandy and offers a relaxed way into Australian rum.
