CDI Secret 2007

CDI Secret 2007 is a single cask Australian rum selected by Compagnie des Indes, the French house known for its terroir led, broad origin range under Florent Beuchet. Distilled in 2007 and bottled unsweetened at 11 years and 43%, it answers a simple curiosity, what a quiet Australian distillate becomes after continental ageing in a single ex bourbon barrel.

The profile is dry and restrained rather than loud. Esters and green apple lift the nose alongside citrus and an overripe note, while the palate runs to pear, oak and a herbal dryness with a whisper of honey and ginger. The finish is woody and gently spicy with yellow fruit. There is no big ester funk and no cask strength punch here, which is the point, it reads almost like a fruit brandy and offers a relaxed way into Australian rum. Those wanting power or heavy Jamaican style funk should look elsewhere.
