New Yarmouth has become a darling of independent bottlers for its robust, high ester pot still rum, and Compagnie des Indes captures that here in a 2005 single cask at 55%, unsweetened and twelve years old. France's CDI has a name for terroir led selections, and this one leans into the distillery's loud, solvent driven side.
Molasses fermentation and double retort pot distillation give the intense, ester heavy nose its glue, varnish and tropical fruit, and ex-bourbon ageing keeps things relatively lean and dry. The palate doubles down on esters and tropical fruit before turning to cookie dough, honey and light wood on the finish. It is a slightly leaner, drier New Yarmouth than some, with the kind of addictive funk that keeps drinkers coming back. Best neat, with time to let the esters settle.
