CDI Leviathan is an notably aged blend from Compagnie des Indes, the respected, terroir led French bottler. Bringing together column still molasses and cane juice rum to a full forty eight years, it is a rare bottling built around the depth that only long maturation can bring.
Matured in ex-bourbon oak and bottled unsweetened at 46%, it opens with a deep, layered nose of dried fruit, raisin, leather, coffee and wood. The palate is elegant and dry, turning to barrel, licorice and dark chocolate, though the long years and gentle strength leave the finish a touch shorter and more delicate. This is a rum to sip slowly and attentively, giving it time in the glass to unfold. One for experienced drinkers who value great age and refined, unsweetened character over sheer power.
