Cazcanes Extra Añejo No.7 is a 100% Blue Weber tequila in the extra añejo class, made from organic agave and verified additive-free, from a cult Los Altos house known for high proof, single water source bottlings. Where many tequilas at this age lose the plant under wood, Cazcanes keeps the cooked agave present alongside long barrel rest.
It ages on average around 37 months, just past the three year extra añejo minimum, in a mix of ex-bourbon casks from named distilleries including Jack Daniel's, Jim Beam and Four Roses, with a small part of the batch finished on Napa Cabernet French oak staves for depth. The philosophy is aged to taste rather than to the calendar. Strong barrel presence brings vanilla, caramel, dark chocolate and sweet coconut, while the palate is silky and almost oily with butterscotch, dried fruit and spicy cinnamon at 40%.
