Description
Etienne Thiébaud set up Domaine des Cavarodes in the heart of the Jura in 2007 at the age of 22, guided by regional experts in natural winemaking and committed to both the classic and the recovered local varieties. This wine is made from Poulsard, a thin-skinned Jura grape that gives pale, delicate, low-tannin reds. The name Les Lumachelles refers to the fossil-rich limestone marl of the site, a soil packed with ancient shell fragments that lends the wine its mineral drive and freshness. Farming is natural and organic, and the wine is aged for twelve months in foudres, large old oak casks whose low surface-to-volume ratio allows slow, gentle maturation without adding overt oak flavour, preserving the grape's delicacy. The colour is pale, translucent ruby. The nose is fragrant, with wild strawberry, red cherry and rose over a herbal, earthy note. The palate is light-bodied and fresh, with very fine tannin, bright acidity and a mineral, saline finish. Serve lightly chilled at 13 to 14 degrees. It pairs with poultry, pork, richer fish and mushroom dishes.
