Description
Domaine des Cavarodes is the project of Etienne Thiebaud, a natural winemaker in the north of Arbois in the Jura who trained with Pascal and Evelyne Clairet at Domaine de la Tournelle before setting up on his own. This is a single-variety Trousseau, a Jura red grape that is thin-skinned and pale, giving light-bodied and aromatic wines. The vineyard name Lumachelles points to a limestone rich in fossil shell fragments, a cool-climate soil that lends the wine its acidity, its mineral edge and its light structure. Farming is organic and the wine is made naturally, then aged twelve months in foudres, large old oak casks that let the wine breathe and settle without adding oak flavour. The colour is a pale, translucent ruby. The nose is fresh and savoury, with red berries, cherry, dried herbs, a floral note and a stony, earthy undertone. The palate is light and taut, with fine tannins, bright red-currant acidity and a peppery, saline finish. Serve at 14 to 15 degrees, ideally with a light chill. It suits roast poultry, pork and earthy mushroom dishes.
