Description
Domaine des Cavarodes is the small natural estate Etienne Thiebaud founded in 2007 in the village of Cramans, in the northern part of the Jura. From only a few hectares of vines split across the two banks of the Loue and over towards Arbois, he makes cuvees that aim above all for purity and clear terroir expression. Messagelin is a single Arbois bottling of Trousseau, a thin-skinned Jura variety that gives paler, highly aromatic reds. The marl and limestone soils and the cool continental climate suit the grape, holding acidity while allowing the fruit to ripen slowly. Vinification is low intervention, with the wine ageing twelve months in large old foudres that lend oxygen and roundness without adding oak flavour. The colour is a light, translucent ruby. The nose is fragrant, with red berries, cherry, dried herbs and a floral note, while the palate is light bodied and savoury with fine tannin, brisk acidity and a peppery finish. Serve at 14 to 15 degrees, with a light chill in warm weather. It suits roast chicken, pork and mushroom dishes.
