Cavallotto makes this Barolo only from Nebbiolo grown on the Bricco Boschis hill in Castiglione Falletto, the family’s home cru since 1928. Sustainably farmed and traditionally aged, it shows red cherry, dried rose, tar and tobacco.
Description
Cavallotto is a family estate in Castiglione Falletto, in the heart of Barolo, farming the same vines since 1928 and now in its fourth generation. This wine is drawn entirely from the Bricco Boschis hill, a monopole the family owns and works sustainably without synthetic herbicides. Castiglione Falletto sits on a band of Helvetian sandstone and marl, soils that tend to produce Barolo combining the structure of Monforte with a degree of perfume and elegance, and the south-facing slopes of Bricco Boschis ripen Nebbiolo fully. Cavallotto works in a traditional register, with long macerations and extended ageing in large oak casks, where slow, gentle oxygen exchange softens Nebbiolo's substantial tannins without overlaying new-wood flavour, allowing the site to speak. The colour is bright garnet. The nose shows red cherry, dried rose and violet, with tar, tobacco, liquorice and dried herbs. The palate is full bodied, with firm, ripe tannins, high acidity and a long, savoury finish built for the cellar. Serve at 17 to 18 degrees in a large glass and decant for one to two hours. It pairs with rich beef, mushrooms and truffle, and aged cheese.
