Cava d’Onice, the project of Simone Nannetti, makes this Brunello di Montalcino from Sangiovese. Aged three years in French oak and a year in bottle, it shows dark cherry, plum and dried herbs over firm tannin and deep structure.
Description
Cava d'Onice is the winery of Simone Nannetti, who learned the craft from 2005 at Conti Costanti before establishing her own estate in Montalcino. The wine is pure Sangiovese, the only permitted grape for Brunello di Montalcino, grown on the warm, dry hills of southern Tuscany. Montalcino's galestro and clay soils and its long, sunny growing season give Sangiovese the full ripeness it needs to carry extended ageing, while elevation and good airflow keep the acidity firm. By appellation rule and by design, this wine is aged three years in French oak barrels followed by a year in bottle, a slow maturation that resolves Sangiovese's powerful tannin through measured oxygen exchange and builds tertiary depth. The wine is deep garnet, with aromas of dark cherry, plum and dried herbs over tobacco, leather and earth. The palate is full bodied and structured, with high acidity, firm but fine tannin and a long, savoury finish that will reward further cellaring. Serve at 17 to 18 degrees, decanting an hour or two ahead. It is built for roast and braised red meat.
