Cati Ribot makes this low intervention Mallorcan white from native Giró Blanc, Malvasía and Premsal. Farmed biodynamically with no added sulphites and given some skin contact, it is a fresh, low alcohol white of lemon, lime and orchard fruit.
Description
Son Llebre Blanco comes from Cati Ribot, a Mallorcan winemaker who turned away from the island's traditional full, high alcohol style after her sommelier studies in Barcelona. She works biodynamically to revive native Mallorcan grapes and make fresh, low alcohol wines with minimal intervention and no added sulphites. This white blends Giró Blanc, Malvasía and Premsal Blanco, all local Balearic varieties. Mallorca is a warm Mediterranean island tempered by sea breezes, and picking early helps keep the alcohol low, here just 11.5 percent, and the acidity fresh. The wine sees a period of skin contact, resting the juice on the grape skins to draw out aromatics, gentle texture and a little grip, while the natural winemaking keeps the fruit direct and unpolished. There is no oak. The colour is pale with a slight natural haze. The nose is delicate and expressive, with lemon and lime, green apple and white flowers over a light peach note. The palate is dry, light and fresh, with a faint skin contact texture and a clean, savoury finish. Serve well chilled at 9 to 10 degrees.
