Cati Ribot Malvasia is a natural, biodynamic white from Santa Margalida on Mallorca, made by Cati Ribot, who turned the family estate away from powerful, high-alcohol wines towards a lighter, more local style after training as a sommelier. Mallorca's Mediterranean climate is tempered by sea breezes, and the island's limestone and clay soils, worked here without synthetic inputs, give the aromatic Malvasía grape its floral lift and saline edge. Picking early keeps the wine at a low 10.5 per cent alcohol, so it stays fresh and delicate rather than heavy. It is made with minimal intervention, farmed biodynamically and is vegan. Malvasía is naturally perfumed, and this bottling puts that character front and centre. In the glass it is pale with green highlights, and the nose is markedly floral, with white peach, elderflower, white flowers and lemon over a light herbal note. The palate is light and dry, with melon and citrus fruit carried by fresh acidity and a saline, coastal finish. The low alcohol makes it easy to drink and versatile at the table. Serve well chilled at 8 to 10 degrees.
