Description
Cati Ribot Cambuix comes from a third-generation grower in Santa Margalida, Mallorca, working biodynamically with the native Balearic grapes Callet, Escursac and Manto Negro. The name, a Mallorcan word for unkempt, dates from the 2020 vintage, when a hailstorm left the vineyard dishevelled and the family chose to bottle the moment as a rosé. This is a natural wine, vegan and made with minimal intervention. Mallorca's warm Mediterranean island climate is moderated by sea breezes, while the native varieties, well adapted to the heat and drought, retain freshness and a saline character drawn from the maritime setting. The wine is given a short skin maceration and then aged four months in oak barrels, where slow oxygen exchange and contact with the lees build texture and a savoury, faintly nutty depth, while keeping the colour pale. The result is a very pale, almost white-wine style. The colour is a straw yellow with subtle greenish highlights. The nose shows fresh red fruit, green apple and citrus over dried herbs. The palate is dry, lively and saline, with a textured, almost vinous weight and a clean finish. Serve well chilled at 9 to 11C. It suits grilled fish, shellfish and lighter pork.
