Description
Castro Candaz Mencia is a red made by Raul Perez with oenologist Rodrigo Mendez in the Galician appellation of Ribeira Sacra. It is produced entirely from Mencia, the region's leading variety, grown on the steep terraced slopes above the Sil and Mino rivers. The slate and schist soils here drain quickly and reflect heat, while the Atlantic influence and altitude keep nights cool, so the grapes ripen with good colour and firm acidity. Harvest is done by hand from these difficult terraces. The wine is aged for six months in used French oak barrels, which lets it soften and gain texture without adding obvious wood flavour, keeping the focus on fruit and site. Expect a deep ruby colour, a nose of raspberry, cherry and black pepper with a stony mineral edge, and a fresh, mid-weight palate with fine tannins, bright acidity and a savoury, faintly herbal finish. Serve at 16 degrees, decanting briefly if young. It pairs well with roast beef, game and mushroom dishes.
