Description
Castell del Remei Oda comes from the D.O. Costers del Segre in inland Catalonia, where a continental climate and wide day to night temperature swings let the fruit ripen fully while keeping fresh acidity. The blend draws on Cabernet Sauvignon, Merlot, Tempranillo and Garnacha from vines averaging about 20 years old, farmed with a low intervention approach that leaves the natural cycle of the site largely undisturbed. After fermentation the wine spends twelve months in a mix of French and American oak. That barrel time softens the tannins through slow oxygen exchange and layers vanilla and sweet spice over the fruit, while malolactic fermentation rounds the texture. The result is deep ruby in the glass, with ripe plum, dark cherry and red berry on the nose lifted by cedar, black pepper and a touch of earth. The palate is full bodied and structured, the four grapes giving both flesh and grip, closing on a savoury, lightly oaked finish. Serve at 16 to 18 degrees, ideally decanted an hour ahead, alongside roast and grilled meats. It is a dependable partner for hearty winter cooking.
