Description
Casebianche is the estate of Pasquale Mitrano and Elisabetta Luorio at Torchiara, in the Paestum area of the Cilento coast in Campania. Iscadoro is a blend of Malvasia, Fiano and Trebbiano grown organically on their fourteen hectare property, farmed and made with low intervention. The wine is refined in amphora alongside barrel and long ageing on its lees, an unusual regime for the region. The amphora allows slow, gentle oxygen ingress through the clay without adding wood flavour, the lees contact releases mannoproteins that build a broad, textured palate, and the combination gives a savoury, faintly oxidative complexity while the coastal limestone and clay soils and the sea air keep the fruit fresh. Eight months of this ageing rounds the wine and adds grip. Expect a deep gold colour, a nose of ripe pear, apricot, dried herbs and toasted almond, and a full, textured palate carrying stone fruit, honey, citrus peel and a savoury saline note into a long finish. At 13% it has weight and character. Serve at 11 to 12 degrees in a large glass.

Pairs with roast pork and grilled meaty fish such as tuna or swordfish, where the texture holds up. The savoury, nutty character also suits hard aged cheeses.
