Description
Cascina delle Rose is a five hectare family estate in the Tre Stelle area of Barbaresco, now in its fourth generation under Giovanna Sobrino and farmed organically. This is single-variety Nebbiolo from the Barbaresco cru, the calcareous marl soils of the Langhe hills giving the grape its firm structure and perfume. Cool nights and warm days preserve the high acidity and aromatic lift that mark good Nebbiolo. The wine ages twenty-four months in oak foudres, large old casks whose slow oxygen exchange softens the grape's substantial tannins while keeping the fruit and site clear rather than layering on oak. The colour is pale garnet, typical of the variety. The nose shows red cherry, dried rose, tar and a savoury, earthy note. The palate is medium bodied and structured, with bright acidity and firm, fine tannin that will settle with age, finishing long on red fruit and spice. Serve at 16 to 18 degrees and decant an hour ahead. It suits braised beef, game and hard, nutty cheeses, and works with mushroom risotto and truffle dishes.
