Description
Cascina degli Ulivi sits in the Gavi hills of southern Piedmont, where Stefano Bellotti farmed biodynamically for decades. A Demûa is a field blend of Chasselas, Riesling, Timorasso and other white varieties, bottled as Vino da Tavola outside the appellation rules. The vineyards work without synthetic treatments, and the wine is made as a natural white with minimal intervention in the cellar. It rests on its lees and spends two months in large wooden casks, which softens the texture and adds a savoury depth while the lees contact builds mid-palate weight rather than overt oak. Timorasso lends structure and a stony backbone, Riesling brings lift and Chasselas keeps it gentle and open. The colour is a bright straw with a faint gold. The nose is orchard fruit and white flowers with a herbal, earthy undertone from the natural winemaking. The palate is dry and textured, showing green apple, pear and white peach against a lemony acidity and a chalky, mineral finish. Serve it at 10 to 12 degrees in a standard white glass.

Pairs with grilled sea bass, clams and mineral-driven shellfish where its saline edge stands in for a squeeze of lemon. The lees texture also carries roast chicken and creamy vegetable dishes, while the savoury depth suits aged hard cheeses such as Comté.
