Casastos Old Tom Gin Small Batch Black-Peach

CASASTOS Spirits in Austria built this small-batch Old Tom for spectacle as much as flavour. In the glass it sits deep black, the natural colouring shifting to a vivid red as soon as tonic is poured in. Beneath the theatre is a serious fruit gin: juniper berries, coriander, elderflower, blackberry leaves and aronia berries frame fresh, ripe peaches and dark wild berries, the Old Tom sweetening lending body without tipping into sugar.

The nose carries ripe peach, dark berries, juniper and a floral edge. On the palate it is fruity and gently sweet, juicy peach laced with aronia and a fine herbal spice over a firm juniper spine, closing harmonious and lightly spiced. For the full effect, build it with a good Indian tonic over ice and garnish with fresh peach or apple slices, then watch the colour turn.
