Casa Castillo grow Monastrell and Garnacha on calcareous bedrock in Jumilla, from vines over forty years old. Las Gravas ferments by variety in underground vats and ages twenty months in foudre, giving a deep, structured organic red with dark cherry, pepper and stony depth.
Description
Finca Casa Castillo sits in the DO Jumilla in Murcia, where Las Gravas is drawn from old Monastrell and Garnacha vines over forty years of age, planted on calcareous bedrock. The chalky subsoil and hot, dry continental climate concentrate the fruit, while the limestone gives the wine grip and a stony, mineral spine that keeps the high ripeness in check. This is a certified organic wine. The harvest is crushed with around a quarter whole clusters, and each variety ferments separately in small underground concrete vats before racking off the skins. The wine then ages for twenty months in large foudres, where the gentle, slow oxygenation of big oak rounds the structure without adding obvious wood character, allowing the terroir to lead. The colour is deep cherry red. The nose shows ripe plum and black cherry, cracked pepper, wild thyme and liquorice, with an earthy, savoury底 undertone. The palate is full and firm, with concentrated dark fruit, fine grained tannins and a long, stony finish. Serve at 17 degrees, decanted, in a large glass. It is built for roast and grilled red meat.
