Description
Carrasviñas Fermentado en Barrica is a barrel fermented Verdejo from Félix Lorenzo Cachazo in D.O. Rueda, a producer whose family was among those who fought to win the region its own denomination. Rueda sits high on the plateau of Castilla y León, where stony, free draining soils and a wide day to night temperature swing preserve Verdejo's aromatic intensity and firm acidity, giving a wine with the structure to take oak. Rather than the usual stainless steel treatment, this is fermented in barrel and then aged six months on its lees in wood before a further five months in bottle. Fermenting in oak and keeping the wine on its lees adds body and a creamy, faintly toasty character through the release of mannoproteins, while the oak contributes spice and gentle oxygen exchange. The colour is bright straw gold. The nose blends white peach and citrus peel with toasted bread, almond and Verdejo's signature fennel and herbal note. The palate is textured and dry, the fruit and oak balanced by fresh acidity and a long, savoury finish. Serve at 10 to 12 degrees. It suits richer fish, poultry and nutty cheeses.
