Caroni closed on the Caroni plain in 2003, and every bottle since draws on a finite stock of casks left behind, which is what makes a 1997 vintage like this one worth attention. Decadent Drinks released it under its Rum Sponge label at twenty three years old and a cask strength 60.1%, a single Trinidad distillery laid down in ex-bourbon oak.
Molasses distillate matured over two decades carries deep oak and a varnish edge typical of the distillery, here trailed by sweet cinnamon and mint on the nose. The palate is dry and layered, raisin set against earthy, coffee tones with the rubbery note that marks heavier Trinidad spirit, closing dry and savoury. At full strength it rewards patience in the glass, a dense and serious pour aimed at drinkers who already know what this lost distillery does.
