Description
Bodegas Carlos Serres are a long-established house in Rioja, better known for still wine, and this sparkling is made by the traditional method, the bottle-fermented process used in Champagne and Cava. It is built on Viura, the region's principal white grape, and made from a single vintage. After the second fermentation in bottle the wine rests on its lees, developing the toasted, biscuity autolytic character that marks the method, and it is finished at brut dosage for a dry style. As a Rioja sparkling it sits outside the Cava denomination.
The colour is a pale gold with a fine, steady bead. The nose shows apple, pear and quince lifting into toasted bread, biscuit and a nutty almond note. The palate is dry and rounded, the orchard fruit carried by a fine mousse and a fresh, citrus-peel finish. Serve at around eight to ten degrees in a white-wine glass or tulip. It makes a good aperitif and pairs with shellfish, white fish, cured ham and hard cheeses.
