Description
Finca Las Caraballas sits at Medina del Campo in Castilla y León, farming organically between vineyards and pine woods. This Sauvignon Blanc is made to show fruit and freshness rather than oak. The estate works its high, continental plateau, where hot days and cold nights preserve the aromatic compounds and natural acidity that define the grape. Fruit is picked early and pressed gently, then fermented at cool temperatures in stainless steel to keep the volatile thiols and green, herbal character intact. There is no barrel and no malolactic softening, so the wine keeps its bright line. In the glass it is pale yellow with green highlights. The nose leads with pear and ripe banana over green apple, elderflower and a grassy edge, and the palate is light, dry and clean with citrus acidity and a crisp close. This is a wine for early drinking while its aromatics are at their most lively. Serve well chilled at 8 to 10 degrees.
