Finca Las Caraballas farms this organic Viognier on the plains of Castilla y León. Aged on its lees for texture, it shows ripe white peach, apricot and honeysuckle, with a soft stone fruit weight and a gently floral edge.

Description
Finca Las Caraballas works organically on the flat, continental plains of Castilla y León, where hot dry summers and cold nights let Viognier ripen its stone fruit while holding acidity through the wide day to night swing. Viognier is a grape that gives generous aroma and body rather than sharp acid, and the ageing here is on its fine lees, where spent yeast cells break down and release mannoproteins that add a rounder, creamier texture and carry the fruit across the palate. No new oak is used, so the character stays fruit led. The colour is bright straw with a green tint. The nose leads with white peach, apricot and honeysuckle, backed by pear and a light almond note. On the palate it is medium bodied and soft, the lees weight filling out ripe stone fruit before a clean, faintly honeyed close. Serve at 10 to 12 degrees in a white wine glass.






Additional information
Pour it with roast chicken and squash or a tray of baked root vegetables, where the ripe stone fruit meets the sweetness of the roots. It also works with baked white fish in a light butter sauce and with hard nutty cheeses such as aged Manchego.
