A 21 year old Caperdonich from the distillery at 48%. A soft, fruity malt of pear, cream and gentle spice. Its spirit went largely into blends like Chivas Regal and Royal Salute. Its four stills were dispersed when the distillery was dismantled. Chivas released an official Secret Speyside Caperdonich in 2019. This is a finite single malt from a lost Speyside distillery.

Description

A 21 year old Caperdonich, a distillery release, cask Batch CP/004, at 48%. Caperdonich was a Speyside distillery in Rothes, closed in 2002 and since demolished. Water came from the Caperdonich Burn, the so called secret well above Rothes.

The spirit was run through the distillery's tall copper stills, for the light, creamy, fruity make Caperdonich is known for. It rested in ex-Bourbon oak, the wood adding a light vanilla. Oxidative maturity brings a waxy, fruity depth, ethyl esters of tropical fruit building over the pear. Caperdonich leaned to cream, pear and mint where Glen Grant showed green apple. Slow oxidation over decades draws the creamy spirit towards a waxy, fruity richness. The clean spirit shows the cask clearly, which is why it suits both bourbon and sherry. Maturation in the cool north east kept the spirit fresh across long years. Closed in 2002 and later demolished, its profile is fixed for good.

At a hearty 48% it carries real weight. Apple, pear and a soft honey, with a soft vanilla from the oak. The mouthfeel is waxy, the fruit carried on a creamy body. It finishes creamy, fruity and waxy. This is a creamy, tropical Speyside single malt of real age.
