This Caol Ila was bottled by Sukhinder Singh’s Elixir Distillers, at 55.2%. Smoke, sea spray and an oily lemon fill the glass. The spirit is matured largely on the mainland. Islay’s quiet giant, vast yet refined. It is the most independently bottled of all the Islay malts. This is an Islay malt of clean smoke and bright citrus.

Description
A Caol Ila chosen by Sukhinder Singh's Elixir Distillers, bottled at 55.2%. Caol Ila stands below a steep brae on Islay's rugged east shore. The malt is medium peated, giving a cleaner smoke than the south shore Islays.
This was distilled in tall stills that lend the smoke an oily lightness, building a refined, maritime peat. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the spirit. No age is given, but vanillin vanilla and the lemony phenols of the smoke are well knit. Years in oak round the smoke, the peat mellowing while the brine stays. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. The clean, lemony smoke has made it a favourite of blenders for generations. Water falls to the distillery from Loch nam Ban in the hills above. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays.
At 55.2% without water it is rich and full. Wood smoke, lemon zest and brine, with a gentle oak sweetness beneath. An oily smoke coats the palate, citrus and brine behind. A long, coastal finish carries a peaty warmth. This is one of the most versatile of the Islay malts.
