Water comes from Loch nam Ban, above the distillery. Bottled by independents the world over, and by Diageo itself. This is a versatile Islay single malt from Port Askaig.

    A 12 year old Caol Ila, from the bottler That Boutique-y Whisky Company, bottled at 55%, one of 129 bottles. Caol Ila sends more spirit to independent bottlers than almost any malt. The warehouses are ranged along the rocky shore at the water's edge.

    The spirit was distilled in tall stills that lend the smoke an oily lightness, giving the lighter Islay style its shape. A bourbon barrel held it, the oak lending vanilla and a little cream. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. A gentle vanillin sweetness from the oak balances the coastal phenols. Maturation by the sea gives the malt its mineral, sea spray character. The clean spirit shows the cask clearly, which is why it suits so many wood types. The spirit's high notes of lemon and grass survive even long maturation. Refill oak lets the maritime peat and lemon of the spirit lead the way.

    At a full 55% it is bold and oily. A smoky, briny coastal character, with vanilla and a soft caramel from the wood. Soft smoke and citrus sit behind the cask. Ash, lemon and brine draw out the close. This is the elegant, lighter side of Islay.
