Description
A Caol Ila of an 8 year old chosen by the bottler Morrison and MacKay, distilled in 2010, bottled at 46%, one of 810 bottles. Caol Ila is Diageo's largest Islay distillery. It was founded by Hector Henderson and later passed to the Distillers Company.
This was made from medium peated malt for a clean, smoky spirit, for a smoky spirit with a citrus lift. Ex-Sherry wood added a dried fruit richness beneath the smoke. In its extractive youth the spirit takes vanillin vanilla and lactone coconut quickly, the peat phenols vivid and lemony. Olive oil and lemon sit at the heart of the Caol Ila character. Refill oak lets the maritime peat and lemon of the spirit lead the way. The clean spirit shows the cask clearly, which is why it suits so many wood types. The spirit's lightness lets sherry, wine and bourbon casks all show through. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays.
At 46% it is supple and oily. A coastal peat with citrus and pepper, with dried fruit, fig and walnut from the cask. Lemon, olive oil and a soft ash run through the middle. It finishes smoky, oily and bright. This is a refined, citrus driven Islay smoke.
