Description
A Caol Ila drawn by the Dutch bottler van Wees, distilled in 2008, from cask 310355, bottled at 57.9%, one of 313 bottles. Caol Ila sends more spirit to independent bottlers than almost any malt. The clean, lemony smoke has made it a favourite of blenders for generations.
The spirit was distilled with a long fermentation and a clean cut, for an oily smoke that leans to lemon and brine. A bourbon barrel held it, the oak lending vanilla and a little cream. These first years are extractive, the oak giving lactones as coconut and vanillin as vanilla beneath a sharp, citrussy smoke. A slow maturation in the cool island air keeps the spirit fresh and oily. A clean smoke and a coastal salt define the distillery style. Tall stills and a clean cut give the spirit its oily, lemony lightness. Cool, damp warehousing slows the loss of the angel's share over the years.
At 57.9%, undiluted, it is bold and clean. Smoke, lemon and a peppery oil, with honeyed oak underneath. The texture is oily, the smoke threaded with citrus. The finish is long, smoky and citrussy. This is one of the most versatile of the Islay malts.
