Description
From the Pitlochry bottler Signatory Vintage, a 7 year old Caol Ila, distilled in 2015, from cask 313888+313878+313880, bottled at 40%, one of 1350 bottles. Caol Ila is an east coast Islay distillery on the strait facing Jura. A few weeks each year the distillery runs an unpeated, Highland style spirit.
This was drawn off a high cut from peated barley, for a smoke more elegant than heavy. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Early, extractive maturation draws vanillin (vanilla) and furfural (toasted almond) from the wood over a clean, phenolic smoke. The spirit's lightness lets sherry, wine and bourbon casks all show through. The distillery was expanded again in the 21st century to meet blend demand. Caol Ila's smoke leans to lemon, olive oil and brine rather than tar or iodine. The warehouses are ranged along the rocky shore at the water's edge.
At an easy 40% it is gentle. Wood smoke, lemon zest and brine, with a soft vanilla from the oak. Smoked lemon and sea salt build over an oily body. Smoke and sea salt see out a long finish. This is a refined, citrus driven Islay smoke.
