Its tall stills give a lighter, cleaner island spirit. Founded at Port Askaig in 1846, it is Islay’s biggest distillery. This is a bright, coastal Islay malt of poise.

Description
The bottler Morrison and MacKay released this Caol Ila, a 7 year old, distilled in 2012, from cask 321802, bottled at 50%. Caol Ila is one of the largest malt distilleries in all of Scotland. The malt is medium peated, giving a cleaner smoke than the south shore Islays.
This was run from peated malt through tall stills on Loch nam Ban water, building the elegant Islay smoke at its heart. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Young and extractive, the cask sheds vanillin (vanilla) and toasted hemicellulose sugars (a light caramel) fast, the phenols still sharp and medicinal. A gentle vanillin sweetness from the oak balances the coastal phenols. Port Askaig is a tiny settlement on the rugged east coast of Islay. A ferry crosses the Sound from Port Askaig to Jura and the mainland. Phenols from the peat smoke carry the medicinal, lemony edge through the years.
Bottled at a cask strength 50%, it is intense. A clean peat with sea salt and citrus, with honeyed oak underneath. The texture is oily, the smoke threaded with citrus. A long, briny finish ends on lemon and soft smoke. This is an elegant Islay single malt.
