The bottler The Whisky Fellas picked this Caol Ila, a 5 year old, at 49%. A coastal smoke runs to lemon, olive oil and a peppery lift. Most of its make goes into the Johnnie Walker blends. The distillery looks out to the Paps of Jura. It is the most independently bottled of all the Islay malts. This is the smoky workhorse of Johnnie Walker in single malt form.

Description
A Caol Ila drawn by the bottler The Whisky Fellas, distilled in 2016, from cask 11, bottled at 49%, one of 70 bottles. Caol Ila is an east coast Islay distillery on the strait facing Jura. It was founded by Hector Henderson and later passed to the Distillers Company.
Worked from peated malt for the lighter Islay style, for a clean, coastal, oily make. A fresh bourbon barrel lent vanilla, coconut and a fuller body. Early, extractive maturation draws vanillin (vanilla) and furfural (toasted almond) from the wood over a clean, phenolic smoke. Refill oak lets the maritime peat and lemon of the spirit lead the way. Time in oak deepens the oily body while the maritime smoke stays bright. The cool Islay air gives a slow, steady maturation by the shore. Water falls to the distillery from Loch nam Ban in the hills above. The malt is medium peated, giving a cleaner smoke than the south shore Islays.
Undiluted at 49%, it is powerful. A coastal peat with citrus and pepper, with a creamy oak note. Smoke, lemon and a saline minerality fill the middle. A long maritime smoke closes it. This is Caol Ila's lighter, maritime Islay smoke.
