Description
An 18 year old Caol Ila, this distilled in 2007 from the Italian bottler Wilson and Morgan, from cask 311594, bottled at 59.1%, one of 261 bottles. Caol Ila is a workhorse of the blending halls and a favourite of malt drinkers. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
It was made from medium peated malt for a clean, smoky spirit, building the elegant Islay smoke at its heart. Ex-Bourbon casks held it, the gentle American oak letting the make lead. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, structured grip, the smoke now mellow. Olive oil and lemon sit at the heart of the Caol Ila character. Port Askaig is a tiny settlement on the rugged east coast of Islay. Phenols from the peat smoke carry the medicinal, lemony edge through the years. Cool, damp warehousing slows the loss of the angel's share over the years.
At a natural 59.1% it is full and oily. A bonfire smoke with lemon and sea salt, with a creamy oak note. Beneath the smoke run lemon, brine and a peppery oil. It finishes smoky, oily and bright. This is a lemony, coastal Islay single malt.
