A 16 year old Caol Ila, this distilled in 2007 from the bottler Hart Brothers, bottled at 53.6%, one of 259 bottles. Caol Ila makes a clean, maritime malt on the east coast of Islay. The clean, lemony smoke has made it a favourite of blenders for generations.
Drawn off a high cut from peated barley, building the elegant Islay smoke at its heart. Refill American oak let the spirit speak, adding a quiet honeyed note. Into oxidative maturity, slow air ingress builds fruity ethyl esters (pear and apple) and a waxiness, the phenols softening to a coastal whisper. Olive oil and lemon sit at the heart of the Caol Ila character. Refill oak lets the maritime peat and lemon of the spirit lead the way. The malt is medium peated, giving a cleaner smoke than the south shore Islays. Years in oak round the smoke, the peat mellowing while the brine stays.
Undiluted at 53.6%, it is powerful. A fresh peat smoke over oily lemon, with vanilla and a soft caramel from the wood. A maritime salt and a lemon lift run through it. A smoky, oily warmth lingers with lemon and salt. This is the elegant, lighter side of Islay.
