Drawn by the bottler Moon-Import, a 16 year old Caol Ila, at 46%. An elegant smoke carries grapefruit, salt and a green olive note. The spirit is matured largely on the mainland. It is the most independently bottled of all the Islay malts. Bottled by independents the world over, and by Diageo itself. This is a maritime Islay malt, smoke worn lightly.

Description
A Caol Ila drawn by the bottler Moon-Import, distilled in 1995, from cask 9810, bottled at 46%, one of 348 bottles. Caol Ila is the quiet giant of Islay, vast yet refined. It was founded by Hector Henderson and later passed to the Distillers Company.
This was distilled with a long fermentation and a clean cut, building the elegant Islay smoke at its heart. A bourbon barrel held it, the oak lending vanilla and a little cream. At oxidative maturity vanillin and lactones are fully expressed and ellagitannin tannins lend a polished, drying frame to the smoke. Phenols from the peat smoke carry the medicinal, lemony edge through the years. A few weeks each year the distillery runs an unpeated, Highland style spirit. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. The warehouses are ranged along the rocky shore at the water's edge.
At 46% it is smooth and clean. A fresh peat smoke over oily lemon, with a quiet vanilla under the smoke. The oily body carries the smoke long and clean. A long, coastal finish carries a peaty warmth. This is the elegant, lighter side of Islay.
