Description
A 15 year old Caol Ila, this distilled in 2008 from the bottler Dramfool, from cask 313320, bottled at 58.3%, one of 207 bottles. Caol Ila is among the most widely traded of Islay's single malts. From a small Victorian works it grew into one of Scotland's biggest malt distilleries.
Drawn off the distillery's six tall stills from peated barley, giving a bright, citrus driven peat. A red wine cask lent berry fruit and a dry, tannic edge. Into oxidative maturity, slow air ingress builds fruity ethyl esters (pear and apple) and a waxiness, the phenols softening to a coastal whisper. Time in oak deepens the oily body while the maritime smoke stays bright. Long ageing turns the young, sharp peat into a soft, coastal smoke. The clean, lemony smoke has made it a favourite of blenders for generations. Much of the spirit leaves the island by sea to mature on the mainland.
Undiluted at 58.3%, it is powerful. A fresh peat smoke over oily lemon, with red berry and a dry spice from the cask. Lemon, olive oil and a soft ash run through the middle. The finish is clean, smoky and maritime. This is the smoky malt of the Sound of Islay.
