A 14 year old Caol Ila from the bottler The Stillman's DE, from cask 900113, bottled at 53.5%, one of 290 bottles. Caol Ila sits on the shore at Port Askaig, on the narrow Sound of Islay. The warehouses are ranged along the rocky shore at the water's edge.
The spirit was distilled slowly from peated malt for a refined island smoke, shaping the lighter side of Islay. A sherry cask wrapped the spirit in dried fruit and a nutty depth. Through the integration phase spirit and wood marry, vanillin settling into a rounded vanilla as the guaiacol phenols mellow into a softer smoke. Caol Ila's smoke leans to lemon, olive oil and brine rather than tar or iodine. The peat here is medium rather than heavy, so fruit and smoke share the glass. Years in oak round the smoke, the peat mellowing while the brine stays. Phenols from the peat smoke carry the medicinal, lemony edge through the years.
At 53.5% without water it is rich and full. Smoke, grapefruit and a maritime salt, with raisin and brown sugar from the cask. Lemon, olive oil and a soft ash run through the middle. A long, briny finish ends on lemon and soft smoke. This is a maritime, lemony Islay single malt.
