Description
A Caol Ila of a 14 year old chosen by the bottler Hidden Spirits, distilled in 2007, from cask CI 722, bottled at 53.7%. Caol Ila is the largest distillery on the Isle of Islay. Its spirit also feeds blends such as Bell's and Black Bottle.
This was worked from peated malt for the lighter Islay style, building a refined, maritime peat. An American oak hogshead added vanilla and a light toffee. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Maturation by the sea gives the malt its mineral, sea spray character. Caol Ila's smoke leans to lemon, olive oil and brine rather than tar or iodine. The make balances phenolic smoke against a bright, oily citrus. Most of its peated malt is destined for the Johnnie Walker blends. Long ageing turns the young, sharp peat into a soft, coastal smoke.
At a hearty 53.7% it carries real weight. A coastal peat with citrus and pepper, with a soft vanilla from the oak. Beneath the smoke run lemon, brine and a peppery oil. The close is long, smoke over a citrus lift. This is a lemony, coastal Islay single malt.
