The independent Murray McDavid released this Caol Ila, a 12 year old, distilled in 2012, from cask 2200718 +19 +20 +21, bottled at 52.3%, one of 1502 bottles. Caol Ila is the most heavily bottled of all the Islay malts. Long fermentations build the fruity, citrus notes that sit beneath the smoke.
It was distilled slowly from peated malt for a refined island smoke, giving a clean, lemony peat. Maturation came in ex-Bourbon wood, the oak quiet behind the spirit. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Refill oak lets the maritime peat and lemon of the spirit lead the way. Water falls to the distillery from Loch nam Ban in the hills above. The malt is medium peated, giving a cleaner smoke than the south shore Islays. The spirit's lightness lets sherry, wine and bourbon casks all show through.
At a full 52.3% it is bold and oily. A clean peat with sea salt and citrus, with vanilla and a soft caramel from the wood. The oily body carries the smoke long and clean. Lemon, soft ash and sea salt see it out. This is a clean coastal malt with a lemony peat.
