Description
The Elgin house Gordon and MacPhail released this Caol Ila, a 12 year old, distilled in 2004, from cask 306493, bottled at 46%, one of 257 bottles. Caol Ila sits on the shore at Port Askaig, on the narrow Sound of Islay. Its peated character is built on malt smoked to a medium level of phenols.
It was distilled from medium peated malt in tall copper stills, shaping the lighter side of Islay. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Sea air works into the maturing casks, lending a briny, coastal lift. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. The original Victorian distillery was almost entirely rebuilt in the modern era. The spirit's lightness lets sherry, wine and bourbon casks all show through.
Reduced to 46%, it is mellow. Peat smoke, citrus and a soft oil, with a quiet vanilla under the smoke. The oily body carries the smoke long and clean. The finish runs oily, smoky and clean. This is a clean, smoky Islay single malt from Caol Ila.
