Description
A 12 year old Caol Ila, this distilled in 1982 from the Italian bottler Wilson and Morgan, bottled at 46%. Caol Ila sends more spirit to independent bottlers than almost any malt. The warehouses are ranged along the rocky shore at the water's edge.
Distilled slowly from peated malt for a refined island smoke, giving the lighter Islay style its shape. A bourbon barrel held it, the oak lending vanilla and a little cream. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Time in oak deepens the oily body while the maritime smoke stays bright. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. Diageo's Special Releases have featured both peated and unpeated Caol Ila. Olive oil and lemon sit at the heart of the Caol Ila character. Most of its peated malt is destined for the Johnnie Walker blends.
At an easy 46% it is gentle. Peat smoke, citrus and a soft oil, with a gentle oak sweetness beneath. An oily smoke coats the palate, citrus and brine behind. A smoky, oily warmth lingers with lemon and salt. This is the smoky malt of the Sound of Islay.
