This Caol Ila was bottled by the bottler The Firkin Whisky Co. Ltd, an 11 year old, at 48.9%. A coastal smoke runs to lemon, olive oil and a peppery lift, with raisin and brown sugar from the cask. Its tall stills give a lighter, cleaner island spirit. Its casks mature within sound of the sea. This is one of the most characterful of the Islay malts.

Description
An 11 year old Caol Ila, this distilled in 2012 from the bottler The Firkin Whisky Co. Ltd, from cask SC6AB, bottled at 48.9%, one of 30 bottles. Caol Ila is a maritime malt, matured within sound of the sea. Its peated character is built on malt smoked to a medium level of phenols.
The spirit was run from peated malt through tall stills on Loch nam Ban water, for an oily smoke that leans to lemon and brine. Ex-Sherry wood added a dried fruit richness beneath the smoke. Through the integration phase spirit and wood marry, vanillin settling into a rounded vanilla as the guaiacol phenols mellow into a softer smoke. The make balances phenolic smoke against a bright, oily citrus. Long fermentations build the fruity, citrus notes that sit beneath the smoke. A slow maturation in the cool island air keeps the spirit fresh and oily.
At cask strength 48.9% it is muscular. Ashy smoke, lemon oil and a saline tang, with raisin and brown sugar from the cask. Soft smoke and citrus sit behind the cask. A smoky, oily warmth lingers with lemon and salt. This is one of the most versatile of the Islay malts.
