This Caol Ila was bottled by the Italian bottler Wilson and Morgan, an 11 year old, distilled in 2014, from cask 318004 + 5/6/7/8/9/10, bottled at 57.1%, one of 1947 bottles. Caol Ila is an Islay malt of clean, oily, citrus driven smoke. The warehouses are ranged along the rocky shore at the water's edge.
Distilled in tall stills that lend the smoke an oily lightness, for a clean, coastal, oily make. A long spell in ex-Bourbon oak rounded the spirit gently. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. A slow maturation in the cool island air keeps the spirit fresh and oily. Olive oil and lemon sit at the heart of the Caol Ila character. A ferry crosses the Sound from Port Askaig to Jura and the mainland. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
At cask strength 57.1% it is muscular. Wood smoke, lemon zest and brine, with vanilla and a honeyed edge from the cask. The texture is oily, the smoke threaded with citrus. Ash, lemon and brine draw out the close. This is the smoky malt of the Sound of Islay.
