    700ml / 58.1%
    Single Malt

    $168

The bottler James Eadie picked this Caol Ila, an 11 year old, at 58.1%. A lighter Islay smoke, all lemon, brine and a peppery oil, with a dry, nutty, savoury depth from the cask. Most of its make goes into the Johnnie Walker blends. Caol Ila is the largest distillery on Islay. This is a maritime Islay malt, smoke worn lightly.

A Caol Ila drawn by the bottler James Eadie, distilled in 2011, from cask 362230, bottled at 58.1%, one of 346 bottles. Caol Ila wears its Islay smoke more lightly than its southern neighbours. Diageo's Special Releases have featured both peated and unpeated Caol Ila.

Distilled from medium peated malt in tall copper stills, for the light, maritime smoke Caol Ila is known for. Ex-Sherry wood added a dried fruit richness beneath the smoke. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. A gentle vanillin sweetness from the oak balances the coastal phenols. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. A slow maturation in the cool island air keeps the spirit fresh and oily. Its peated character is built on malt smoked to a medium level of phenols.

Undiluted at 58.1%, it is powerful. A smoky, briny coastal character, with a dry, nutty, savoury depth from the cask. An oily smoke coats the palate, citrus and brine behind. A smoky, oily warmth lingers with lemon and salt. This is a clean, smoky Islay single malt from Caol Ila.
